A Lazy Spring Saturday

Feeling pretty lazy today, and not particularly motivated to do much of anything other than listen to npr podcasts and let my mind wander. So I put on an episode of To the Best of Our Knowledge, and decided to make some mint lemonade.

Boil 1 cup water and 1 cup sugar, turn off heat when sugar has dissolved. Add in mint leaves (I don’t know if the amount matters- I used about 2 tablespoons maybe). Let sit for 10 minutes. Drain out mint leaves. Add lemon juice to the mint syrup until you have the right sweet/tart combo. This is your concentrated lemonade. I added about 3 cups of water to this mix to make a big jug. You could split it up into numerous batches, and put some in the freezer for another time.

Tomorrow, while having a very awkward lunch meeting with the attorneys I work for, I will be dreaming of living somewhere like this, where giant surprises wash up on shore.
